
Caesar Dressing

...Stay tuned on that one, but for now here it is for you to enjoy at home. It’s so easy to make, you can whip it up minutes before you serve your meal.
Ingredients:
- 2 cups of Veganaise Mayo
- 2 Tbsp fresh lemon juice
- 3 cloves garlic
- 2 Tbsp Dijon mustard
- Salt & pepper to taste
- 1/4 cup of oil to drizzle in while using the processor or blender
Choose Olive for richer flavor, avocado or safflower oil for neutral flavor. If using olive oil, taste for balance; it might need a bit more lemon or mustard.
This dressing brings out the best in our organic Caesar salad ingredients (romaine, red onion, croutons, almonds).
Directions:
Add all ingredients to food processor or blender and blend until smooth and creamy. Et voila!
*Note: You’ll need to keep it in the refrigerator, but it can be stored for a few weeks. I like to keep it in a jar with a lid.
This dressing is so yummy, you’ll get creative and find additional ways to use it. I use it as a dip for crudité. I spread it on so many different meals — and would love to know what you come up with!
