Chickpea Hummus

Impress your guests by whipping up this delicious homemade hummus in minutes. Though not a classic hummus, it’s an easy, fresh, café favorite.

Ingredients:

  • 3 cups cooked chickpeas
  • Small bunch fresh parsley (1/2 cup)
  • 1-2 gloves garlic
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cumin
  • 1/4 of red onion
  • 1/2 tsp salt or to taste
  • 3 tsp red wine vinegar
  • Olive oil
  • Ice cubes 2-3 cubes 

 

 

Directions: 

  1. Put all ingredients (except for the olive oil and ice cubes) into a food processor. As you start to mix drizzle in olive oil and add ice cubes till creamy.
  2. If the mix is too thin, put in fridge for an hour and it will thicken.
  3. For a more traditional take on this recipe add 1/2 cup of tahini for even richer consistency and flavor and squeeze in juice of half of a lemon.
  4. Serve with your favorite chips or toasted or grilled bread. Also delicious in wraps or sandwiches. YUM.
