Raspberry Almond Torte Cookies

I pulled this from a little recipe card that I’ve had for over 30 years. I should call it Irving’s Favorite Raspberry Almond Torte Cookies. Irving was my father. I also called him ‘Oy Vey Ving’ (wink), but he loved them! They are simple, delicious and healthy…besides, they add a bit of sweetness to life.
Makes 18 cookies
INGREDIENTS:
- 1 cup almonds
 - 1 cup oats
 - 1 cup flour
 - 1/4 tsp salt
 - 1/2 cup maple syrup
 - 1/2 cup safflower oil Raspberry jelly or jam
 
 
DIRECTIONS:
- Chop almonds finely in food processor, then pulse oats into course flour
 - Combine dry ingredients
 - Mix wet ingredients together, add to dry. Mix well
 - Prepare cookie sheet with parchment paper, oil the paper
 - Form dough into balls then thumb print a well in the center where you can add a little jelly
 - Bake at 350 degrees for 10-12 minutes
