Roasted Brussels Sprouts

A simple, delicious recipe of few ingredients that packs a punch of health and flavor

I love Brussels sprouts. Besides being rich in vitamin A, C, K and folic acid, they sing of health and vitality — and they make me smile. Not everyone knows that they grow on hearty stalks since we usually find them in large baskets in markets. But in the garden, those amazing round bundles of goodness grow in clusters — a wonder to see and taste.

Ingredients:

  • Brussel sprouts
  • Olive oil
  • Salt
  • Pepper
  • Onion powder
  • Garlic Powder (or of course, fresh chopped garlic to taste)

Note: I’ve intentionally omitted quantities; just season to taste. Brussels sprouts are dense and can take a generous dose. Also, use about a handful of raw sprouts per person.

Directions:

  1. Rinse in cold water
  2. Trim bottom of sprouts
  3. Cut in ½ (or ¼ if larger)
  4. Toss in a bowl and generously cover with oil, sprinkle spices and mix well
  5. Spread on cookie sheet pan or other baking dish
  6. Roast at 350 degrees for approximately 30 minutes, stir occasionally and remove when golden brown

Alternative method: Spread Brussels Sprouts, oil and seasonings into a skillet on medium-high heat, stirring occasionally, just long enough to brown the edges. Then transfer skillet to oven as above and roast until tender.

Note: Depending upon your oven and your desired outcome, you can cook at a higher temperature and for longer if you like a more browned, roasted result. Bottom line: They are pretty fool proof and easy to make. They also pair well with just about any meal (I told you I love them)
