
Spinach Artichoke Dip

Let’s face it, during the warm months (though this certainly isn’t only a summer dip) our appetites and eating habits change. Sometimes we just want something lighter, savory and satisfying. Great served with chips, spread on a sandwich or warm toast. This is always a crowd pleaser.
Ingredients:
- 1 jar of marinated artichokes, 14 oz
- 1 cup of fresh spinach
- 4-6 oz of tofu
- 2 Tbsp vegan mayo
- 2 Tbsp vegan sour cream
- 2 tsp fresh chopped garlic
- 2 Tbsp nutritional yeast
- 2 tsp salt
- Juice of ½ lemon or lime
Directions:
- In a blender add tofu, mayo, sour cream, salt and nutritional yeast and drizzle in olive oil until blended into a thick puree (add a little more tofu if too thin).
- In a separate bowl, roughly chop spinach and artichokes, add garlic, pour the sauce over and mix. Note: Keep refrigerated until ready to use.
- When ready to serve, heat up the mixture on a sheet pan for 10 minutes. Put in a bowl and serve with chips or cracker.
